Wine from France according to tradition
Michel and Mathieu vintner make you visit their domain.
Our domain is a small vineyard in roussillon between the mountain and the sea.
Since 1996 year after year Sylvie and José (Michel and Mathieu’s parents) and their parents before them created a domain, which grew to reach about twenty hectares in1998 .
Since the domain take-over in 1998 by Sylvie and José , major changes were undertaken like

By the end of 2002 , a new decision is met : we will make wine in our own cellar.
It represents a major challenge.
Our stocking bulding is turned into a winery. Important tools are delivered little by little to the future cellar: hopper, press, first cold generator ...As time passes by and harvest approaches, the stainless tanck are delivered by the end of July. The last preparations are completed according to the informed and professional advice of the oenologist Mrs Hélène GRAU.
Finally, on August 14th, the harvester is launched. The whole family is gathered: Sylvie’s parents, Mr & Mrs Jouanole, José’s mother, Mrs Barbé, the children Michel & Mathieu and indeed Sylvie & José. All this crew meets at the “grenouillère” wineyard, located on the last Via Domitia’s remainings. It is a chardonnay grape variety that will be harvested and carried to the private cellar for the first time before dawn to save this white grape variety ‘s aroma & smell. Those grapes will be tiped in the hopper and pumped to the press. Something magical happens. Every thing’s working perfectly. We vinify for the 1st time. Everyone knows his/her role: Granddad at the hopper, grandmums check the press, Sylvie, José & the children care for the juice that arrives at the tanck & for the cooling. What a day!!! What a memory...
After the chardonnay, came the dry muscat, then rosé, then red wines. We have discovered the harvest in private cellar and this love for vinification... the grower’s secret. Our domain currently spreads in about 30 hectares located on the counties of Salses le Château, St Hippolyte, Pia, Claira and Rivesaltes.
The plain made of sandy-gravelly ground and the crest, with its pebble and clayey-limestone topsoil are the two terroir we cultivate.
In the plain, country wine will grow whereas crestg will be saved for AOC wine.
